

Quinoa Veggie Power Bowl
A balanced bowl of fluffy quinoa, roasted veggies and healthy fats.
Ingredients:

1 cup cooked quinoa (from 1/3 cup dry)

1 cup roasted sweet potato cubes

1 cup baby spinach
-
1/2 cup chickpeas, drained & rinsed
-
1/2 avocado, sliced
-
1 Tbsp pumpkin seeds
-
1 Tbsp extra-virgin olive oil
-
1 Tbsp fresh lemon juice
-
Sea salt & black pepper to taste
Instructions:

Cook quinoa according to package, fluff and cool slightly.

In bowls layer spinach, quinoa, sweet potato and chickpeas.

Top with avocado slices and pumpkin seeds.

Whisk olive oil, lemon juice, salt & pepper; drizzle over bowls.
